Jalapeno Sausage Breakfast Scramble

We are also following a Ketogenic’s meal plan but some days we’re a little relaxed with it, but still want to stay on plan. I woke up and looked in the refrigerator and whipped something up with some pretty common left overs. I always have cauliflower in the fridge because it’s the closest thing to potatoes at times. This is also a great veggie to sneak in for those picky eaters! If you’re looking for some inspiration for a yummy breakfast/brunch to fix the family (or just for yourself) check this out! Low Carb Donuts…Yes Please!

  Since going full on Keto, I’ve been doing a lot of experimenting in the kitchen. Thanks to Pinterest I have lots of inspiration! This morning I woke up craving donuts. I actually don’t usually like sugar in the mornings but sometimes it’s a must! I took a stroll through Pinterest and found a Keto Donut recipe! Thanks to Low Carb Joy I was able to satisfy my donut craving. I would personally make a few changes the next time I make them. I’ll add one less egg as the dough was a big more eggy for my liking. Potentially will try 3 eggs and 1 egg yolk. I would also sweeten it a touch more. One thing I tried but didn’t like was frying the donut. I felt it soaked up the oil and gave a strange texture. Ingredients 1/3 cup Coconut Flour 3 tbsp . Swerve swetener (more if you like a sweeter donut) 1/2 tsp Nutmeg (optional) 1/8 th (pinch) tsp. salt 1/2 tsp baking soda 1/8 th tsp (pinch) Glucomannan / Konjac Powder (optional but will help thicken) 2 tbsp Coconut Oil , melted and cooled  4 large Egg , Whole 1/4 cup Almond Milk (unsweetened) 1 […]

Let’s Get Cooking

So I’ve been following a Ketogenic meal plan for about 6 months now. I have to say, I absolutely love it. It’s basically super low carb, high fat and high protein. I am fairly dairy free with it, for the most part, but allow myself some dairy. For a long time I followed the 28 day Challenge by the Ketogenic Girl. It’s wonderful and weightloss is pretty fast but I found it a bit too hard to maintain. Now I mix recipes from Ketogenic Girl as well as some great ones from Peace Love and Low Carb. Occasionally I actually come up with my own! Below is a breakfast pizza using Fathead Pizza Dough. This dough is a life saver! Check out the recipe and try it for yourself. It’s All About Balance

Having spent most of my adult life traveling away from home, chasing a career, I’ve started to realize what’s important in life and you’ll be shocked to know… It’s not the career. I remember being in New York City about 6 years ago and in the back of a cab on my way to a writing session. There were interviews playing on the tv screens in the car and one really caught my ear. A local NY artist was saying what her one regret was. She said at 60 years old, she wished that she spent less time chasing a career and more time focusing on relationships. Not just romantically but also friendships. That moment has replayed in my head so many times. Over the last several years I’ve started to change my way of thinking. I realized that I was at everyone’s disposal but my own. I cared more what people thought of me and wanted from me than my own happiness. We live in a selfish society but I think that most often we aren’t selfish about the right things.
